Passionfruit Curd

Perfect on pancakes or with coconut yoghurt

Ingredients


2 eggs
80g honey
3 passionfruits
60g ghee

Method


Insert the butterfly into Thermomix bowl
Add all ingredients in the bowl
Cook 8 minutes, 80 degrees, speed 3

Pour into a container and allow to cool. Store in fridge

    1. Enjoy! I swapped out the passionfruit last night and made raspberry curd! So yum... dessert tonight: chocolate cake with custard, raspberry curd and yoghurt....mmmmmmmmm ;D

  2. Oh you have just given me an idea. Might try the chocolate cakes but leave out the cacao and replace honey with maple syrup (not GAPS legal I know) and steam them in the TMX. I made the passionfruit curd so will top the puds with it.
